This is one of my tried and true desserts. It's always a big winner at parties and people are always asking me for the recipe. The best part: no baking required! I thought it would be a good one to christen my blog with. Low fat options are in brackets. I've also added a few tips on products in the kitchen. See the recipe after the jump. Enjoy!
Note: This dessert should be made the night before an event.
Difficulty: Easy
Time: 25-35 minutes
Serves 8-10
What you will need:
Utensils:
1 medium-sized mixing bowl This is the one I have at home. It comes with a nice handle which allows for flexibility with mixing. It's pretty cheap and very good quality.
Electric Mixer/Beater Be sure to use the beater attachment and not the whisk attachment.
Medium-Sized Spatula
Ingredients:
1 graham cracker crust (stay tuned for my favorite made-from-scratch version)
8oz or 250mL cream cheese, softened (This is roughly 1 Philadelphia Cream Cheese packet. They also come in low-fat versions for a lower calorie option)
1/3 cup sugar
1 cup sour cream (again, you can substitute a low fat version)
2 tsp pure vanilla extract (this can get pricey so feel free to substitute a less pure version.)
8oz or 250mL whipped topping, thawed (I usually use Cool Whip which can be found in the freezer section of your grocery store. Store brands work just as well.)
Preparation
1. Using the electric mixer at medium speed, beat the cream cheese until smooth. Slowly (very slowly or else it will form lumps) beat in sugar. At low speed, beat in sour cream and vanilla until everything is just combined.
2. Next, gently fold in whipped topping using a spatula. To fold, hold your spatula about 45 degrees from the counter. Starting in the center of the bowl, gently pull the mixture towards you and fold it over on itself. Repeat until you have done all sections of the bowl.
3. Scrape the mixture into the graham crust. Don't overflow. You may have leftover mixture which can be piped on as decoration before serving. Refrigerate for a minimum of 4 hours but you will get the best results if you chill overnight.
4. Toppings
Cut a basket of strawberries and decorate the top of the cake as shown in the picture. You can also use blueberries, raspberries, mangoes or any other fruit of your choice.
