Chickpeas are a surprising source of protein and ideal as a meat substitute for vegetarians. However, they can also make for a great afternoon or cocktail snack.
Instead of satisfying your salt craving with chips or (worse!) fries, consider this healthy, yummy and quick recipe.
Utensils:
1 medium bowl
1 baking sheet
Ingredients:
1 can chickpeas/garbanzo beans (16oz.)
2 1/2 tbsp extra-virgin olive oil
1 tsp of oregano, basil or rosemary (you pick)
salt and pepper to taste (about a pinch of each)
Preparation:
1. Preheat your oven to 300 degrees.
2. Drain, rinse and pat dry the can of chickpeas.
3. Toss in a bowl with the other ingredients.
4. Place on a baking sheet (no overlap) and in the oven for about 45-50 minutes, mixing occasionally. You want them to be brown and slightly crispy when you take them out.
5. Serve at room temperature.
